Description

Just like the cinnamon scrolls you love, but packed with whey protein. They are easy to whip up at home for a delicious healthy snack that helps you hit your goals!

 

Ingredients

Dough

1 1/4 cups (150g) self-raising flour
1 1/2 scoops (50g) Grow by Steve Vanilla whey protein isolate (10% off with code: SCROLLS10)
1 tbsp cinnamon
2 1/2 tbsp sweetener (sweetness should match sugar by volume)
2/3 cup (150g) plain (or vanilla) skyr (icelandic style yogurt). Can be replaced with Greek Yoghurt
1/4 cup (56g) melted butter

Filling

1 tbsp. ground cinnamon
3 tbsp. sweetener of choice
2 tbsp. light butter, melted

Icing

2 tbsp. cream cheese, softened
1/2 cup (56g) plain (or vanilla) skyr
3 tbsp. Sweetener of choice (36g)

 

Instructions

  • Preheat the oven to 180°C.
  • Mix the dry ingredients for the dough in a large bowl.
  • Add the skyr and butter.
  • Work mixture into a dough. Be careful not to overwork the dough.
  • Tip: You can increase the amount of whey protein powder by adding 10 to 30 grams of whey protein at a time along with an equal amount of water. Add slowly and be careful not to overwhelm the mixture — you can always add more whey protein but you cannot take the excess whey protein out.
  • Place the dough on a length of wax paper or other large, flat, non-stick surface and flatten the dough with a rolling pin until it is roughly a 30 x 20 cm rectangle.
  • Mix 1 tbsp cinnamon with 3 tbsp of sweetener.
  • Brush the dough with melted butter. Sprinkle evenly with cinnamon & sweetener mix.
  • Roll the dough lengthwise. Cut into 4 equal parts to separate into the 4 scrolls.
  • Place cinnamon rolls in a small, round baking dish lined with a non-stick spray. Bake for half an hour at 180°C.
  • While the scrolls are baking, mix the icing ingredients in a small bowl.
  • Once the cinnamon scrolls are baked, drizzle the icing over the top while they are still warm.
