Description

Protein cookies are a great way to get increase your protein intake, but most store bought options and recipes aren’t vegan friendly. Premade protein cookies also tend to be much more expensive per gram of protein while making your own at home can be easy and less expensive! And, of course, they ought to taste great too! While it may not be as good as the cookies your grandma used to make, we think this recipe is the best out there and works with any of our Grow Vegan by Steve protein powders, depending on your flavour preference! coffee, caramel, or double choc, it’s all great! (And probably lower sugar than grannies baking.)

Ingredients

  • 2 mashed overripe bananas
  • 3/4 cup Grow Vegan by Steve Chocolate, Salted Caramel, or Iced Coffee (10% off with coupon code: VCOOKIES10)
  • 2 teaspoons vanilla extract
  • 1/3 cup coconut sugar
  • 1/3 cup peanut butter, preferably 100% peanuts and salt. Add a pinch of salt if unsalted.
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 cup rolled oats
  • 1/3 cup vegan chocolate chips (or chopped up vegan chocolate)

Instructions

  • Preheat oven to 180 degrees Celsius.
  • Line a baking tray with baking paper.
  • Mash bananas in a mixing bowl.
  • Add the vanilla extract, coconut sugar, and peanut butter, and whisk until combined.
  • In another bowl, add the Grow Vegan by Steve vegan whey protein alternative, cocoa powder, baking powder, and oats and stir until combined.
  • Add the dry mixture to the wet mixture and stir until well combined. The combined mixture should be quite thick. Fold in the vegan chocolate chips.
  • Scoop about 3 tablespoons of dough for each cookie and roll into smooth balls using your palms. Again using your palms, flatten into thick patties and place on the tray, evenly spaced. Press a fork onto each cookie to create a criss-cross pattern and further flatten the cookies.
  • Bake for 12 – 14 minutes until the golden. Allow them to cool for 5 minutes before transferring to a cooling rack to cool completely before serving.
